Made the dish after marinating for two days (Would have made it yesterday, but parents brought home dinner from C&J’s barbeque):
Made side dish of homemade mashed potatoes with mushroom gravy and peas and carrots.
I think the best thing was the mushroom gravy. Baked the chicken for about 55 minutes, about the right amount of time — our oven takes longer it seems.
I liked the dish, but for some reason two pieces of chicken tasted like fish. I don’t know if it’s the recipe, or the two day marination in the fridge only loosely covered with clingwrap, or the fact that is was $1.00/lb Hill Country Fare chicken.
Food was very edible, but can’t say it was the greatest dish.
Mommy said that she was cooking eggplant and pork tomorrow. I guess it’s nice to have a break, but I kindof like cooking/eating my own food…
