Had chicken thighs. Was hungry. Searched for fast chicken recipe, cooked the first one I saw.
I like it.
It’s like sweet and sour chicken. I used bone-in thighs instead, and added some more stuff to the sauce. Otherwise, it’s pretty good as is. The next major modification I would recommend is to brine/marinate the chicken first — the middle is a little bland.
Other minor modifications are cooking the onions and chicken separately, adding siracha sauce, mustard powder, garlic powder, fresh garlic, black powder and MSG to the sauce. It made a nice fusion sauce. The recipe included is a little lacking in the sauce volume required — so it might be necessary to almost double it.
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 skinless, boneless chicken breast halves
- 3 tablespoons ketchup
- 2 tablespoons soy sauce
- 3 tablespoons white sugar
- 2 tablespoons lemon juice
- 1 teaspoon ground black pepper
Directions
- Saute onion in oil until translucent.
- Add chicken, and brown lightly.
- Combine ketchup, soy sauce, sugar, lemon juice, and pepper; mix well. Pour over chicken, and bring to a boil. Cover, reduce heat, and simmer for 25 to 35 minutes.
