Pan fried fish
use unhealthy amount of olive oil (2 tblsp?) and melt in 1 tblsp of butter. Bring to high heat in non-stick pan.
wash fish. sprinkle with S&P on one side, place salted side down into hot oil. S&P other side of fish. turn fish over after fish starts to brown on the other side. serve with chiffonaded italian parsley.
