20150429 baked salmon
made baked salmon largely following this recipe:

basically:
take salmon out to rest for ~20 min – (let warm up)
preheat oven to 475 F – yes, very hot!
prepare herbs of choice, I used dried parsley and fresh sliced garlic. Press onto flesh side
prepare pan with butter (I used 1 tblsp), pre-clarify in oven.
place salmon in, flesh side down. bake for ~5 minutes.
after 5 minutes, remove skin (it should peel easily), salt and pepper. Flip. salt and pepper herb side. bake ~3 more minutes.
Take it out — check for doneness – err on side of underdone is better than erring on side of overdone.
serve!
Very tasty, baking directly in butter is great. Better than my experiences with fish en papliotte.
