Made general tsao’s chicken again:
It turned out better, I made the batter in the proper order of eggs, chicken, then cornstarch; not eggs, cornstarch, chicken. It is noteworthy that frying it twice helps make the chicken less overcooked. Also, if there is too much egg in the egg:cornstarch breading, that the breading will be soft, not crispy.
