To go with the tamales I made salsa de aguacate/avocado salsa. I was hoping the make the southwest green salsa I keep getting at restaurants, but it ended up more like an avocado sauce with some tang due to the tomatillos. It’s still good.
update 20141215:
I asked Reina how she makes her green salsa, and she said it’s nothing but fresh avocado, serranos (like 1 avocado:1 serrano ratio), and salt to taste. No wonder it’s so hot at Coco Loco or wherever! I probably can add a tomatillo to mine to round it out so it’s not so hot for me.

Smooth and creamy avocado combined with Tomatillos, garlic, onion, cilantro and Serrano Peppers,
makes this simple yet great salsa that can be served as a snack or next to fish or chicken. This salsa
is super healthy and have great nutritious value.

Peel the Tomatillos and wash them along with the Serrano peppers.
Cut one Onion in half and separate the layers of one half. Save the rest.
Put the Tomatillos, Serrano peppers, and the onion in the a pot, cover them
with water and boil them until they change color, tis will take about 5 to 7
minutes of boiling.
Mean wile, Prepare the Avocados and the cilantro.
Step 1: Boiling Ingredients
6 Fresh or Canned Tomatillos
1/2 white onion
2 Serrano Peppers
Cut the avocados in Half, remove the pitt, peel completely and cut in slices.
Cut the cilantro stem and discard, then Chop the cilantro, you will use only
one cup of it. Mince the Garlic.
Serve warm or cold with sea food, chicken or as salad dressing.
Step 2: Preparing the ingredients
3 or 4 avocados
1 cup of fresh Chopped Cilantro
The juice of 1 lime
1 tbsp of Olive Oil
Salt and Pepper to Taste
1 Garlic Clove
Add the Avocados, cilantro, the first 1/2 of the lime juice, the garlic, salt and
pepper.
Once the tomatillos, serranos and onions are ready, add them also the the
blender.
Finally add the Olive Oil, Salt and Pepper to taste.
Blend everything together intill you make a smooth paste.
Now taste it and you can add the rest of the lime juice if you like or save it.
You can also add more Olive Oil if you wish, but if you want to make it more
liquid without the use of the oil, add more tomatillos until you reach the
texture desired.
Step 3: Blending the ingredients
Serve warm or cold with sea food, chicken or as salad dressing.

Notes
The Avocado will not go dark due to the acids in the Lime and Tomatillos. This salsa with last a couple of
weeks in your refrigerator. Keep in a closed container.
